Oreo Cheesecake Cookies
½ Cup of Unsalted Butter
3 Ounces of Cream Cheese
1 Cup of Sugar
1 ½ tsp. Vanilla Extract
½ Cup of Chocolate Chips
1 Cup Flour
1 ½ Cups of crushed Oreo’s
Crush the Oreo’s (you can use a food processor or in a zip-lock bag and use a rolling pen to crush them) make sure they are fine crumbs.
Mix together the Cream Cheese (ROOM TEMPERATURE) and Unsalted Butter (ROOM TEMPERATURE) until well blended and smooth. (If you cut into small chunks takes about 45 minutes to an hour to get to room temperature).
Then add the Sugar and Vanilla Extract until well blended.
Slowly mix in the Flour.
Once all mixed well together, spatula in the Chocolate Chips.
Take the cookie batter and roll into about 1-1 1/2 inch diameter balls, then coat the outside with the Oreo crumbs. Place the coated cookie ball onto a cookie sheet. Make sure you space them out.
Cook for 13-15 minutes or until the edges are a nice golden brown at 375°.
Let cool for about 5 minutes on the cookie sheet then transfer to a cooling rack.
