I'm getting crockpot crazyyyyyyyyyyy!!
I found this recipe on (DUH) Pinterest and tweaked it a little bit...omg it turned out so good.
Ingredients:
- 4 raw, boneless, skinless chicken breasts (about 8 oz. each)
- 2 (15 ounce) cans black beans (rinsed and drained)
- 1 (28 ounce) can diced tomatoes in juice, low sodium is best
- 1 (12 ounce) jar of your favorite salsa, no sugar added
- 1/2 white onion
- Cayenne pepper and red pepper flakes to taste
- Salt and pepper to taste
Directions:
- Place the chicken breasts on the bottom of your slow cooker. Pour the tomatoes and salsa over that and then layer on the beans and corn.
- Cook on HIGH for 4 hours, or until the chicken easily falls apart when the pot is stirred.
Throw some cheddar cheese on top, fat free sour cream (or non-fat plain Greek yogurt!), cilantro and lime.
You can serve it over brown rice or in a low carb tortilla or just right out of the bowl, YUM!
