Beer Cheese Soup | Recipe
1 cup finely chopped Onion
1 cup finely chopped Carrots
3 tablespoons Butter
2 cups Half and Half
1 1/4 cups Chicken Broth
2 cups Cheese Shredded (I used Aged Wisconsin Cheddar and Asiago)
1 1/2 tablespoons Garlic minced
1/2 cup Flour
1/2 teaspoon Worcestershire Sauce
1/2 teaspoon Dry Mustard
1/2 teaspoon Cayenne Pepper
1 cup Beer (I used Highland Gaelic Ale, you can use any amber or red ale)
Salt and Pepper to taste
Sauté the Onion and Carrot in a pot with Butter. Sauté till Onion and Carrots
are soft. Add in the Garlic and flour. After everything is well mixed add in the
Half and Half and Chicken Broth. Then add in the Beer. Next slowly add in the
Cheese. Once all the cheese is added in add in all your spices (dry mustard,
Cayenne pepper, Worcestershire, salt and pepper) bring to a simmer and cook for
Serve with Popcorn, Bread or Sausage!
